In this game, the trash can is your greatest tool.  The secret to perfectly balance what your farm produces and market demands is your trash can.  If you can't fill it, trash it.  Plain and simple.  That little trash can button beside the send button is your best friend!  Your market needs to either be selling contracts or waiting for ones you can fill.
